2004 RIESLING

12% alcohol
This pale straw coloured wine has an intense floral bouquet with citrus and fresh cut grass overtones. The palate shows clean vibrant fruit with a high acid, steely edge that is softer in the mid palate, offering a slight richness which continues through a long dry finish. This wine can be enjoyed whilst young and fresh particularly with seafood, or cellared for longer when it will develop greater colour and complexity. This style of Riesling develops for many years into the classic Australian tradition of oily flavoured wine, suiting a wide variety of foods.

2004 CABERNET SAUVIGNON / MERLOT

13.5% alcohol
Dark magenta in colour with a bouquet of cedar, soft blackcurrant and spice. Cassis characters dominate the initial palate, which broadens into soft plum in the middle with hints of quality French oak adding complexity. Firm tannins offer great structure, making this brooding wine more interesting with food, to match its long finish. Drink now or cellar for up to 10 years.

2007 UNWOODED CHARDONNAY

Macedon Ranges
Colour: Pale green

Made from ultra ripe chardonnay grapes, and assisted by the addition of about 10% sauvignon blanc from the same Macedon ranges vineyard, this is a luscious, intensely fruity, sweet wine. Ripe melon, gooseberries and kiwi fruit are just some of the flavours that characterise both the nose and palate of this unique wine

2005 “KATHLEEN” SHIRAZ

14.5% alcohol
Central Victoria
Colour : Deep ruby red

50 year old non irrigated Heathcote vines endow this extraordinary mellow wine with its gorgeous, intense blackcurrant and blackberry fruit flavours. The other major grape component, from Vince Conte’s fine Shepparton vineyard, brings mulberry and spice attributes. Matured for 17 months in new and aged American and French oak, this is a brilliant deep red velvety wine with leafy tannins and great length on the palate.
Best until 2013

PARAMOOR 2007
BOTRYTIS RIESLING

11.5 % Alcohol, 375 ml
Macedon Ranges

This is the first Botrytis Riesling ever made from Macedon Ranges fruit and is most worthy of that honour. A brilliantly clear, very pale green Riesling, its’ delicate bouquet and palate exhibit a riot of splendidly ripe apples, oranges, mandarins and crisp limes. Sweetness and acidity are so beautifully balanced (there is no cloying sugary sweetness with this wine ) that the drinker is able to savour and enjoy the very long lasting flavour spectrum. Should develop pronounced marmalade character with age.

Great with blue cheese and biscuits, as well as a wide range of sweet desserts. Should make great drinking until about 2020

2005 “THE FRASER ” CABERNET SAUVIGNON/ MERLOT

(70% Cabernet sauvignon,
30% Merlot)
14% Alcohol, 750 ml
Central Victoria

The 2005 “Fraser” is a dark , rich, velvety red wine, redolent with briar fruits in the bouquet and luscious , soft blackberries, cassis and mint on the palate. There’s an abundance of complex ,earthy characteristics typical of top quality, fully ripe Central Victorian fruit and just a hint of chocolate from its minor component of Coonawarra Cabernet Sauvignon. Long, leafy tannins and just the right amount of French oak (after 18 months in barrel) endow this lovely, mellow wine with great balance.

Enjoy on its own or as a suitable companion for any red meat dish. Best between now and 2013.

2006 “JOAN PICTON”
PINOT NOIR

13% alcohol
Macedon Ranges
Colour: Mid blood plum

Dark cherries, pepper and spice, fruit cake and hints of French oak characterise the bouquet of this exceptional wine. Richly textured plum, ripe strawberry and nougat complexities dominate an intense spicy palate that holds a long and sweet tannin finish. Great balance between fruit , acid and tannins! the quality of this wine should not be underestimated. Best until 2020

James Halliday, in the 2007 Australian Wine Companion gives Paramoor Winery an outstanding report. He has rated the winery at 4.5 stars and views Paramoor as “an excellent producer of very high quality wines.”

He has also rated two Paramoor wines – the 2004 Cabernet Merlot (92 points) and the 2004 Shiraz (91 points). This means that each of these wines merits 4.5 cups on the Halliday scale and are “Highly recommended. Wines of great quality, style and character and worthy of a place in any cellar.”

Phillip White, wine critic for the Adelaide Advertiser has previously rated the 2004 Cabernet Merlot at 93 points.
