The 2023 Vintage.
The 2023 vintage at Paramoor was a tricky one with multiple frost events throughout ripening. The region as a whole had marvellous weather after a somewhat chaotic spring. Yields were normal with fine acidity and excellent colour and phenolic ripeness. The erratic frost conditions highlighted the different microclimates across the Macedon Ranges. Vintage began in Will’s vineyard on May 2nd following a severe frost

Vinification.
Yields: < 2 tonnes per acre
Hand harvesting
100% wild yeast fermentation
Natural malolactic fermentation in barrel
100% Neutral French oak maturation
10 months in oak
The Riesling grapes benefitted from extended hang time, with cool ripening days culminating in a vibrant expression of minerality fused with bright zesty notes of citrus with a hint of luscious green apple on the mid palate.
“This was a very easy wine to love. It had a lovely expression of peach as soon as I opened the bottle, which almost filled the entire room. On closer inspection, there was orange blossom and fresh honeysuckle, pointing to its youth and vivacity, while chalk and grapefruit came along for the ride and added some more depth. The palate showed immense acid drive and minerality, giving a tingly sensation on the tongue, accompanied by some saltiness that made you forget that the Macedon Ranges are nowhere near the sea. The mouthfeel is delightful, with a medium+ weight, and the wine is a pleasure to drink either by itself or with something spicy, cheesy or salty.” – 95 Brendan Black
