In the latter part of the 2023 growing season, Geoff took the helm at Paramoor Estate and continued Will Frazer’s tradition of making a premium Cabernet Sauvignon from Colbinabbin Estate on the Eastern slopes of the Mt Camel range, known for its ancient rich Cambrian soil. Perfumed and expressive this wine highlights the exceptional quality of fruit that imparts remarkable complexity and distinction to our wines. After undergoing wild yeast fermentation, this wine matures gracefully for 10 months in French oak prior to bottling and would expect to further evolve beautifully until 2030 and beyond.
